Summary
The SH-determination of milk is possible by polarography with methylmercuric chloride in solution containing urea and buffered at pH 7. The method allows fast estimation and is very good reproducible. Samples containing boric acid or formaldehyde solution as conservation agent may be also used in this method.
Zusammenfassung
Die Thiolgruppen in Milch lassen sich durch Polarographie mit Methyl-quecksilberchlorid in harnstoffhaltigen, gepufferten Lösungen bei pH 7,0 rascher als mit anderen Methoden, zugleich auch mit hoher Empfindlichkeit und guter Reproduzierbarkeit bestimmen. Mit Borsäure bzw. Formalin konservierte Proben sind ebenfalls für die Untersuchung geeignet.
