Summary
Emulsin (Rohferment ofHelferich) and similar enzyme preparations ofRosaceae-Amygdaloideae seeds have been found to exhibit a low but definite oxidizing activity towards aldohexoses in concentrated sugar solutions used for transglycosylation experiments.
