Zusammenfassung
Nach dem Genu\ von Fischkonserven „BÜcklinge in öl“, die in einem grö\eren Fischverarbeitungsbetrieb hergestellt worden waren und aus denen enterotoxinbildende Staph. aur.-Stämme gezÜchtet wurden, traten 3 kleinere Familienepidemien auf; insgesamt waren 7 Personen mit den fÜr Staphylokokken-Intoxikationen typischen Erscheinungen erkrankt. Die Staphylokokken-Stämme gehörten in die Phagengruppe III und zeigten die Lysisbilder 6/47/54/75 +; 6/7/47/54/75 + und 6/7/47/54. Sie waren koagulase- und mannitpositiv und gut empfindlich gegen Penicillin, Streptomycin, Chloramphenicol, Tetracyclin und Erythromyin. Zur Erfassung einer Infektionsquelle und zur Klärung epidemiologischer Zusammenhänge wurden Betriebsbesichtigungen und Nasen-, Rachen- und Handabstriche bei 546 Personen des fischverarbeitenden Personals vorgenommen, auf das Vorhandensein von Staph. aur. untersucht und die Staphylokokken-Stämme mittels spezifischer Phagen getestet. Die Typisierung dieser 241 koagulasepositiven Staph. aur.-Stämme ergab in 57,7% die Gruppe III; sie wiesen in einem hohen Prozentsatz ein gleiches bzw. verwandtes Phagenbild mit denen aus den Dosen gezÜchteten auf. Staphylokokken aus dem Nasen-Rachenraum und von den Händen der Erkrankten gehörten dagegen in die Lysisgruppe I. Auf Grund dieser Ergebnisse wird es als sehr wahrscheinlich angesehen, da\ die Kontamination des Fisches im Betrieb während der Herstellung der Konserve erfolgt sein mu\te. Sie wurde gefördert durch die ausgedehnten manuellen Arbeiten. FÜr die Enterotoxinbildung der eingedrungenen Staphylokokken lagen gleichfalls gÜnstige Bedingungen vor, wie z.B. das längere Aufbewahren des geräucherten, warmen Fisches, das Übergie\en des Fisches mit öl, das Stehenlassen der geschlossenen, noch nicht autoklavierten Dosen sowie deren ungenÜgende Sterilisation.
Abschlie\end werden Vorschläge zur VerhÜtung von Staphylokokken-Kontaminationen in Nahrungsmittelbetrieben, insbesondere in Fischverarbeitungsfabriken, gegeben.
