Summary
Model tests of thiamin which is essential for thiaminpyrophosphat und the metabolism of pyruvic acid showed the following results:

Thiamin is inactivated by copper from pH 6,8.

2.
The threshold value of the thiamin-inactivation is about 1.10−5 mol Cu/1.
Zusammenfassung
Modellversuche an Thiamin, das als Vorstufe des Coenzyms Thiamindiophosphat und beim Metabolismus der Brenztraubensäure eine wichtige Rolle spielt, brachten folgende Erkenntnisse:

Thiamin wird durch Kupfer ab pH 6,8 inaktiviert.

2.
Die Hemmschwelle der Inaktivierung liegt bei 1.10-s mol Cu/1.
