Zusammenfassung
In 148 Tagesnahrungen gesunder Kinder wurden die täglichen Eisenaufnahmen analytisch und durch Berechnung mit Nährstofftabellen bestimmt. Die analytisch bestimmten Eisenaufnahmen von 3–5jährigen Kindern betrugen 5,4±1,7 mg/Tag, die von 10–13jährigen Kindern 9,5±4,5 mg/Tag.
Die mit Nährstofftabellen berechneten Tagesaufnahmen lagen im Durchschnitt 2 mg pro Tag höher als die analytisch bestimmten Werte. Die GrÜnde werden diskutiert.
Zwischen dem Eisengehalt der Tagesnahrungen auf der einen Seite und dem Brennwert, dem Protein-, Fett- und Kohlenhydratgehalt auf der anderen Seite besteht keine ausgeprägte Beziehung.
Die analytisch bestimmten Eisenaufnahmen schwanken von Tag zu Tag bis zum 30fachen des niedrigsten Wertes.
Die Bedeutung der Ergebnisse fÜr die praktische Ermittlung von Eisenaufnahmen mit Hilfe von Nährstofftabellen wird diskutiert.
Summary
In 148 daily food intakes of healthy children, the iron contents were determined by chemical analysis and by calculations using food composition tables. The daily iron intakes as determined by analysis were 5.4±1.7 mg per day and 9.5±4.5 mg/day for children aged 3–5 years and 10–13 years, respectively.
On the average, the data calculated from food composition tables were 2 mg per day higher than the data obtained by chemical analysis. The reasons are discussed.
No special correlation was obtained between the iron contents of the daily food intakes on the one hand, and the fuel values, the protein, fat and carbohydrate contents on the other hand.
The iron intakes obtained by analysis showed a strong day-to-day variation up to the 30 fold value as compared to the minimum intake.
The relevance of the results, concerning data on iron intakes as obtained by calculations from food composition tables is discussed.
