Lal-aminoacide oxydase de venin de serpent est très instable en milieu alcalin et les ions d'acetate soutiennent cette inactivation. Le foie de bœuf contient un facteur qui inhibe partiellement l'effet des ions d'acetate. Cette inhibition est en partie de type compétitif.
