p-Hydroxy und 3,4-Dihydroxy-phenylbrenztraubensäure hemmt die von Phenoloxydase katalysierte Umwandlung von Tyrosin in Melanin unter Anhäufung von Zwischenprodukten. Das Ergebnis wird im Zusammenhang mit der Pathogenese nervöser Störungen diskutiert.
