Summary
Ascorbic acid is a stimulating factor in germination; it reacts with di- or tri-phenols and it lowers, in presence of hydrogen peroxyde, the viscosity of some colloids. It acts as fermenting substrate or as co-enzyme and might have mutagene action.

Die Ascorbinsäure wirkt als Stimulationsfaktor der Keimung; sie reagiert mit Di- oder Triphenolen; sie erniedrigt, in Gegenwart von Hydroperoxyd die Viscosität von gewissen Kolloïden; sie reagiert als Ferment-Substrat, oder als Coenzym; sie hat vielleicht eine mutagene Wirkung.
