Résumé
Aperçu sur la valeur biologique des protides de nos plantes alimentaires, d'après leur teneur en aminoacides indispensables; indications sur les possibilités de supplémentation réciproque. A côté des céréales, des pommes de terre et des légumineuses, les légumes feuilles, jusqu'ici peu étudiés, sont traités en détail. Les légumes où l'insertion des feuilles est normale, comme les choux verts, les feuilles de choux de Bruxelles, l'épinard, la mâche commune, ont une haute valeur biologique, et sont relativement riches en lysine; les légumes qui forment une „pomme“, une „tête“, comme les choux pommés, les laitues pommées, les choux de Bruxelles, possèdent par contre des protides de valeur biologique plus faibles. D'autre part, divers exemples montrent que la composition en aminoacides essentiels, des protides et par conséquent la qualité protéique des divers organes d'une seule et même plante varie beaucoup d'un organe à l'autre.
Summary
An outline on the Biological Value of proteins in our food plants is given, basing on their contents of essential amino acids, and the possibilities of their reciprocal supplementation are indicated. Besides dealing with different kinds of cereals, with potatoes and legumes, special attention is paid to leaf vegetables, of which very little information has been given in the past. Those vegetables of a normal type of leaf insertion, e.g. green kale, Brussels sprouts (leaves), spinach, cornsalad, show a high Biological Value of leafprotein and are comparatively rich in lysine; those vegetables with head- and budformation, e.g. cabbage, Brussels sprouts, cabbage-lettuce, however, have a protein of minor Biological Value.
Furthermore, it is shown that protein composition of essential aminoacids and consequently the quality of protein vary considerably in the different organs of the same plant (stem, ribs and midribs, leafblades, pulses and seeds.)
Zusammenfassung
Es wird ein Überblick über die Biologische Wertigkeit des Eiweißes unserer Nahrungspflanzen auf Grund ihrer Gehalte an exogenen Aminosäuren gegeben und auf die Möglichkeiten gegenseitiger Aufwertung hingewiesen. Neben den Getreidearten, den Kartoffeln und Leguminosen werden vor allem die bisher in anderen Untersuchungen wenig berücksichtigten Blattgemüse eingehend behandelt. Die Gemüse mit normaler Blattinsertion, wie Grünkohl, Rosenkohlblätter, Spinat, Feldsalat, weisen eine hohe Biologische Eiweißwertigkeit auf und sind relativ reich an Lysin, die Gemüse mit Kopfbzw. Knospenbildung, wie Kopfkohl, Rosenkohl, Kopfsalat, besitzen dagegen ein Protein von geringerer Biologischer Wertigkeit. Ausserdem wird an mehreren Beispielen gezeigt, dass die Proteinzusammensetzung an essentiellen Aminosäuren und somit die Eiweißqualität in verschiedenen Organen ein und derselben Pflanze stark differiert.
