Summary
The investigations present the influence of water soluble phosphates on the picture of spectro-photometric curves of thel-ascorbic acid.
The results authorize us to say that with the increase of the value of pH in the solutions, the absorption maximum ofl-ascorbic acid increases as well.
The lowest pH of 4.85–5.00 are observed in water solutions of dihydrogen monophosphates withl-ascorbic acid. In those cases the value of the absorption maximum rises slightly in comparison with the basic solution ofl-ascorbic acid on an average of 0.020.
The solutions of monohydrogen monophosphates with L-ascorbic acid, having pH 7.2–8.2 increase the absorption maximum of the curve on an average of 0.195.
The regularity of the increase of absorption maximum simultaneously to the increase of the value of pH is deranged at the pH level of about 11. This irregularity appears in case of neutral monophosphates of sodium. The irregularity manifests itself in the complete loss of parabolic character by the curve ofl-ascorbic acid, which is a proof of an easy oxidation of this acid in a strong alkaline medium.
Zusammenfassung
Es wurde auf Grund der Untersuchungen festgestellt, daß mit dem Anwachsen des pH-Wertes der Lösungen auch das Absorptionsmaximum derl-Ascorbinsäure ansteigt. Diese Regelmäßigkeit wird gestört, wenn der pH-Wert 8,2 überschreitet.
Das Absorptionsmaximum nimmt von den primären zu den tertiären Phosphaten zu. Eine Ausnahme bilden tertiäre Phosphate des Natriums und Kaliums.
Die Ergebnisse erlauben den Schluß, daß die Anwesenheit von Phosphaten in biologischen Materialien in verschiedenem Grade die Regelmäßigkeit der Absorptionskurve vonl-Ascorbinsäure beeinflussen, wodurch fehlerhafte Mcßergebnisse entstehen. Beim Vergleich des Absorptionsmaximums einer wäßrigenl-Ascorbinsäurelösung beobacht man beim Zusatz von Phosphaten eine wesentliche Steigerung dieses Maximums, mit Ausnahme beim Zusatz primärer Monophosphate.
