Einführung in die Problematik der Mykotoxine

An introduction to the mycotoxin problem

Summary

Mycotoxins and phytoalexins and their producers are reviewed. Possibilities for the degradation of mycotoxins and for the control of fungal growth are discussed. Raw materials and products especially liable to harbor fungi are named, reasons for abundant occurence of mycotoxins are presented and questions of legislation discussed.

Zusammenfassung

Es wird ein Überblick gegeben über verschiedene Mykotoxine und Phytoalexine sowie ihre Produzenten. Die Möglichkeiten des Abbaues von Mykotoxinen und der Vermeidung von Pilzwachstum werden diskutiert. Schließlich werden die besonders gefährdeten Rohstoffe und Produkte, Gründe für häufige Mykotoxinvorkommen sowie Fragen der Gesetzgebung besprochen.
