Summary
The stability of carotinoides towards oxidizing influences primarily depends on autoxidizing reactions, which take place in the surrounding medium-solvent or fat ingredients. Chlorinated hydrocarbon-insecticides increase the decomposition of carotene without regard of the insecticide concentration to a various amount. An increased decomposition photometrically was found inβ-apo-8′-carotene and β-carotene. The results in the presence of lipids indicate an indirect influence of chlorinated hydrocarbons. On the one side this probably goes along with development of various peroxides in solvents or lipids and, on the other side, initiates the decomposition of already present fatty acids to peroxide radicals.
