Summary
Under aerobic conditions at 15° C an extensively purified lipoxygenase was incubated with linoleic acid. 1–2 mol-% volatile aldehydes were formed in relation to the hydroperoxides (main product of the catalysis). Pentanal, hexanal, 2-heptenal, 2-octenal, 2,4-nonadienal and 2,4-decadienal were identified as 2,4-dnph. During the incubation the formation of hexanal was followed by a headspace analysis. A pathway for the development of these compounds is discussed.
Zusammenfassung
Unter aeroben Bedingungen wurde eine aus Erbsen rein dargestellte Lipoxygenase bei 15° C mit Linolsäure intubiert. Bezogen auf die Hydroperoxide (Hauptprodukt der Katalyse) bildeten sich 1–2 mol-% flüchtige Aldehyde. Als 2,4-DNPH wurden Pentanal, Hexanal, 2-Heptenal, 2-Octenal, 2,4-Nonadienal und 2,4-Decadienal identifiziert. Durch eine Headspace-Analyse wurde die Bildung des Hexanals während der Incubation verfolgt. Ein Reaktionsweg zu den flüchtigen Aldehyden wird diskutiert.
