Summary
By drying acetonic extracts with NaCl and CaCl2 according to the method of Heuser and Scudamore [1-4], large amounts (up to 800%) of Ethyleneehlorohydrine (ECH) originally not existing, are formed of Ethyleneoxid (EO). However Ethyleneglycol (EG) as a metabolite of EO in food is lost, whereas on the one hand EG dissolves in the CaCl2-phase, on the other hand EG is transferred to the corresponding ketal. Therefore this method [1-4] does not seem to be qualified to determine E0, ECH, and EG.
Zusammenfassung
Es wird gezeigt, daß nach der Methode von Heuser u. Scudamore [1-4] durch die Trocknung des acetonischen Extraktes mit NaCI und CaCl2 site. große Mengen (bis 800%) Äthylenchlorhydrin (ÄCH) aus Äthylenoxid (ÄO) gebildet werden, die ursprünglich nicht vorhanden sind. Dagegen geht in Lebensmitteln vorhandenes Äthylenglykol (ÄG) (als Metabolit von ÄO) verloren, indem sich einerseits ÄG in der CaCl2-Phase löst, andererseits mit Aceton indas entsprechende Ketal übergeführt wird. Die Methode [1-4] erscheint daher zur Bestimmung von ÄO, ÄCH und ÄG nicht geeignet.
