Zusammenfassung
Im Vollblut und im Plasma wurden die Abbauvorgänge der Lipide während der Lagerung im Eisschrank untersucht. Dabei sinkt a) die Jodzahl innerhalb von vier Wochen, b) bei den Phospholipiden findet eine langsame Hydrolyse statt, c) die Menge der freienFettsäuren nimmt von 4–7 mg% auf bis 80mg% zu. Peroxyde ließen sich nicht nachweisen. Bei den Lipoproteiden ließen sich insbesondere in der Fraktion I Abbauvorgänge darstellen. Die Oxydation der Lipide und die Hydrolyse ließen sich durch Zusatz von Tokopherol und Mintacol teilweise hemmen.
Summary
The breakdown processes of the lipids in whole blood and in plasma stored in the refrigerator were investigated. It was found that a) the iodine number fell within 4 weeks, b) there was slow hydrolysis of the phospolipids, and c) the quantity free fatty acids rose from 4–7 mg% up a maximum of 80 mg%. There were detectable breakdown processes in the lipoproteins, especially in Fraction I. Both oxydation and hydrolysis could be partly prevented by addition of tocopherol and Mintacol.
