Conclusion
En résumé, l'étude simultanée de la biréfringence et de la turbidité d'un système en écoulement permet d'obtenir des informations sur les processus d'écoulement à l'échelle des unités cinétiques. Elle fournit des indications sur le degré d'indépendance des particules et aide à suivre les perturbations de la structure (orientation, agrégation, dissociation ou changement d'état) en fonction du gradient de vitesse. On peut, par ces méthodes, repérer les irrégularités de régime d'écoulement et trouver les causes de nombreuses anomalies de comportement rhéologique. En apportant des renseignements assez directs sur les changements de l'état de dispersion des constituants d'un système en écoulement, l'étude optique fournit une base expérimentale précise aux recherches sur la corrélation entre l'état de mouvement et la structure des systèmes colloïdaux et, en particulier, contribue à élucider la question de la correspondance entre écoulement et changement de phase.
Zusammenfassung
Untersuchungen der Variation von Doppelbrechung und optischer Trübung in strömenden Systemen erweisen sich als fruchtbare Methode zur Aufklärung der Fließvorgänge im einzelnen. Für kolloide Lösungen steht die Strömungsdoppelbrechung häufig in Zusammenhang mit einem nicht-Newtonschen Verhalten, das eine Folge von Orientierung und Verformung der Teilchen oder der Zerstörung der gesamten Struktur der Lösung ist. Änderungen der optischen Trübung weisen im allgemeinen auf Veränderung des Bindungszustandes zwischen den Teilchen, auf Vergrößerung oder Verkleinerung der kinetischen Einheiten hin. Die Form der Kurven, die den Auslöschwinkel und die Doppelbrechung als Funktion der Geschwindigkeitsgradienten darstellen, hängt von dem Grad der freien Beweglichkeit der Teilchen ab und gibt darüber Auskunft. Die Kurven ermöglichen somit, die in Abhängigkeit vom Geschwindigkeitsgefälle aufeinander folgenden Störungen der Flüssigkeitsstruktur zu verfolgen. Die Beobachtung der optischen Turbulenz in konzentrierten Systemen weisen auf Abweichungen von der laminaren Strömung hin, die schon bei viel kleineren Werten des Geschwindigkeitsgradienten auftreten als bei den für das Einsetzen der Turbulenz kritischen. Weiterhin ermöglicht die Untersuchung der Trübungen auch das in kleinsten Bereichen durch Strömung bedingte Auftreten von Zustandsänderungen (Phasen-) festzustellen. Hierdurch kann eine genauere Erklärung von Thixotropie und Rheopexie für gewisse Fälle gegeben werden. Die behandelten Beispiele betreffen hauptsächlich homogene Seife-Salz-Wasser-Mischungen mit mannigfacher Zusammensetzung und Suspensionen von denaturierten Proteinen.
