Zusammenfassung

  1. 1.

    Es wurde der Einfluß des pH auf einige Eigenschaften der Gelatine besprochen.

  2. 2.

    Es wurde untersucht, welchen Einfluß das pH auf den Schmelzpunkt von zehnprozentigen Gelatinegelen mit und ohne Salzzusatz hat.

  3. 3.

    Quellungsversuche mit Gelatine ergaben, daß der pH-Einfluß bei pH>5,0 viel kleiner ist als bei pH<5,0.

  4. 4.

    Es wird aufmerksam gemacht auf das völlig verschiedene Verhalten von Dehnung, Schmelztemperatur und Quellung der Gelatine bei pH>5,0 und <5,0, und eine Erklärungsmöglichkeit wird gegeben.
