Summary
Carbohydrates, di- and polysaccharides yield, after hydrolysis, monosaccharides and, as a product of prolonged heating, furfural derivatives which, in their turn, are condensed with o-dianisidine, thus givingSchiff bases. The test is performed in such a way that a filter paper impregnated with the reagent is exposed to the vapours of the products of decomposition which are rather volatile. The limits of identification for sugars cover a range from 50 to 100γ, approximately; the limits of identification for the other carbohydrates are about 10γ.
By means of alkaline hypochlorite solution,α-amino acids can be converted into aldehydes containing less carbon by one atom than the respective amino acid. The aldehydes, in their turn, are detected by fuchsine-sulphurous acid. Limit of identification: 50 to 100γ of amino acids.
