Zusammenfassung

Es wird gezeigt, wie aus analytisch bestimmten Merkmalsgehalten von Konfitürenproben mit Hilfe mathematisch-statistischer Methoden auf die Fruchteinwaage geschlossen werden kann. Dabei werden auch die Rezepturanteile der Zusatzstoffe Zucker, Stärkesirup und Pektin sowie die Merkmalsgehalte dieser Mischungsanteile berücksichtigt. Es wird eine praktisch durchführbare Methode für die Beurteilung von Konfitüren hinsichtlich der Fruchteinwaage entwickelt, deren Aussagesicherheit auf Grund eines Konfidenzschlusses angegeben werden kann.
