Summary
In order to study the binding of volatile aroma constituents to solids the exsiccator method has been investigated. A special variation is described for room temperature, dry solids and low boiling volatiles. It is possible to study the kinetics of adsorption and desorption, the maximal sorption capacity and the conditions for total desorption.
Experiments with ethanol and 14 foods or constituents of foods show, that ethanol is adsorbed by substances of high molecular weight or by foods which are mainly composed of such substances rather slow and combined with swelling. Total desorption takes place with these substances not at room temperature, but at 60° C. This may be due to strong but not irreversible sorption of small amounts of ethanol.
Zusammenfassung
Die Eignung der Exsiccatormethode zum Studium der Sorption flüchtiger Aromastoffe an Festkörper wurde untersucht. Eine spezielle Arbeitsvorschrift für Zimmertemperatur, trockene Festkörper und niedrigsiedende Aromastoffe wird gegeben. Es ist damit möglich, die Kinetik der Ad- und Desorption zu studieren und die maximale Sorptionsfähigkeit sowie die Bedingungen, unter denen vollständige Desorption erfolgt, zu ermitteln.
Ein Versuch mit Äthanol und 14 Lebensmitteln bzw. Reinsubstanzen, welche in Lebensmitteln vorkommen können, ist beschrieben. Er zeigt, daß Äthanol von makromolekularen Substanzen oder Lebensmitteln, die solche in größerer Menge enthalten, unter Quellung und relativ langsam sorbiert wird. Eine vollständige Desorption findet bei diesen Festkörpern meist erst bei 60° C statt, was auf relativ starke, aber nicht irreversible, Bindung einer kleinen Menge Äthanol schließen läßt.
