Zusammenfassung

Die bisher veröffentlichten Untersuchungen zur Bestimmung der Fruchteinwaage — bzw. des Fruchtgehaltes — werden referiert. Es wird gezeigt, wie man durch Vergleich von Merkmalsgehalten in der Konfitüre mit den entsprechenden Merkmalsgehalten des jeweils verwendeten Obstfruchtfleisches auf die Fruchteinwaage schließen kann. Dabei werden sowohl Merkmalsgehalte in den Zusatzstoffen wie Pektin und Stärkesirup berücksichtigt als auch die Mengen dieser Zusatzstoffe in der Rezeptur.
