Résumé
Les différences d'alimentation de la population genevoise selon que le repas ait lieu au restaurant ou au domicile n'ont pas encore été documentées par des études nutritionnelles. Dans l'étude présentée ici, trois diététiciennes diplômées ont interrogé par téléphone 626 adultes résidant à Genève, sur leur alimentation de la veille. Les interviews étaient réparties sur les 7 jours de la semaine. La participation fut de 80%. Les sujets interrogées décrivaient dans le détail leur alimentation du jour précédent ainsi que le lieu et l'heure de chacun des repas. Les résultats montrent que les hommes vont plus souvent au restaurant que les femmes, que les jeunes déjeunent plus souvent au restaurant que les plus âgés mais que l'âge n'est pas un facteur discriminant pour le lieu du dîner. Les apports nutritionnels du déjeuner pris à la maison sont semblables à ceux du déjeuner pris au restaurant. Le soir le genevois mange, quand il va au restaurant, plus et arrose un peu plus abondamment son repas, mais la composition relative en protéines, lipides et glucides est la même pour ceux qui mangent au restaurant ou à la maison. En conclusion, le genevois se nourrit de façon très similaire au restaurant ou à la maison. Ceci suggère que c'est le client qui influence le contenu de la carte du restaurateur plutôt que le contraire. Notre hypothèse est que pour la prévention et la santé publique, il faut avant tout informer le consommateur de ce qu'est une alimentation saine, le restaurateur suivra.
Zusammenfassung
Die Unterschiede in der Ernährung zwischen Haus- und Ausser-Haus-Verpflegung der Genfer Bevölkerung wurde bis jetzt nicht dokumentiert. In der vorliegenden Studie haben drei diplomierte Ernährungsberaterinnen 626 in Genf wohnende, erwachsene Personen per Telefon befragt, und zwar mittels der 24-Stunden-Erinnerungsmethode. Die Befragung verteilte sich auf sieben Wochentage. Die Teilnahme betrug 80%. Die Befragten beschrieben ihre Ernährung des letzten Tages, inkl. dem Ort und der Zeit jeder Mahlzeit. Männer gehen öfter ins Restaurant als Frauen, jüngere Leute essen häufiger im Restaurant zu Mittag als ältere Personen, aber für das Abendessen ist das Alter nicht relevant. Es gibt keine Unterschiede in der Nährstoffzufuhr des Mittagessens zwischen Haus- und Ausser-Haus-Verpflegung. Am Abend isst und trinkt der Genfer mehr im Restaurant als zu Hause, aber die relative Zufuhr an Eiweiss, Fetten und Kohlenhydraten ist ähnlich. Zusammenfassend können wir sagen, dass die Nährstoffzufuhr der Genfer Bevölkerung im Restaurant vergleichbar ist mit der zu Hause. Also werden die Mahlzeiten im Restaurant wahrscheinlich von den Wünschen des Gastes bestimmt. Für die Public Health schlagen wir die folgende Hypothese vor: Wenn der Gast über gesunde Ernährung informiert wird, folgt der Wirt.
Summary
Differences in dietary intakes between those who eat at home and those who eat at the restaurant have not been documented previously. In the present study, three registered dietitians interviewed 626 adult residents of Geneva on the telephone about their diet the day before. Interviewes were distributed over the seven days of the week. Participation rate was 80%. Results show that men go more often to the restaurant than women, that young people have lunch at the restaurant more often than older people but that age is not related to having dinner at the restaurant. When a resident of Geneva goes to the restaurant to have dinner, he eats and drinks more than those who eat at home, but the relative content of proteins, lipids and carbohydrates of the diet is not different. In conclusion, in Geneva the diet at the restaurant is very similar to the diet at home. This suggest that the meals in a restaurant tend to adapt to the customer's expectations rather then the opposite. The potential implication for public health is that the priority is to inform the customer about what is a healthy diet, the restaurant owner will follow his client's need.
