Summary
The digestive effect of human gastric juice of a certain enzyme- and pH-concentration on the hindlegs of frogs is closely related to time and to pepsin concentration (for details see first report).
The proteolytic breakdown products of the digestive process were measured spectrophotometrically. Typical curves were obtained in which the rise (indicating the speed of the digestive process) was dependent on the pepsin concentration. The curves flattened when the process of digestion had reached the musculature, a finding already observed macroscopically. The speed and the degree of the digestion are essentially dependent on the temperature and the peptic activity of the gastric juice. The skin of the frog legs was digested faster than the muscular tissue; lean frogs were digested with greater speed than fat frogs. Hydrochloric acid concentration (pH) is a decisive factor.[/p]
Zusammenfassung
Werden Sprungbeine von Fröschen in menschlichen Magensaft bestimmter Ferment- und pH-Konzentration gebracht, tritt eine Verdauung ein, welche der Größe nach abhängig von der Temperatur und der Pepsinkonzentration ist (s. Mitteilung 1). Die bei der Verdauung freiwerdenden Spaltprodukte des Eiweißzerfalls wurden spektrometrisch erfaßt. Es ergaben sich charakteristische Kurven, deren Steigungswinkel (Verdauungsgeschwindigkeit) abhängig von der Pepsinkonzentration ist. Eine Abflachung der Kurve trat nach Beginn der Muskelverdauung ein, wie ein Vergleich makroskopischer und spektrometrischer Befunde erbrachte. Geschwindigkeit und Grad der Verdauung sind im wesentlichen von der Temperatur der peptisehen Aktivität des Magensaftes abhängig. Die Haut der Froschbeine wurde rascher als die Muskulatur, magere Frösche schneller als fette verdaut. Die Salzsäure (pH-Konzentration) spielt eine entscheidende Rolle.
