Summary
Artificial coconut flavouring can be detected by the presence of theγ-lactones, either alone or accompanied by the naturalδ-lactones, GC-MS techniques being used for the purpose. An additional indicator for artificial flavouring is the presence of triacetin as a solvent and additional flavour substances such as vanillin for enhancing and rounding the aroma of coconut.
Zusammenfassung
Künstliche Aromatisierung von Kokosnuß enthaltenden Produkten kann aufgrund der Anwesenheit vonγ-Lactonen allein oder zusammen mit den natürlich vorkommendenδ-Lactonen nachgewiesen werden. Als Analysenmethode wird die GC/MS eingesetzt. Zusätzliche Hinweise auf künstliche Aromatisierung geben das Vorhandensein von Triacetin als Aromalösungsmittel und Substanzen wie Vanillin, die zur Verstärkung und Abrundung des Aromas zugefügt werden.
