Summary
The microbial decomposition of eggproducts is indicated by an increase in the concentration of succinic acid; an increase in the concentration ofβ-hydroxybutryric acid is characteristic for fertilized eggs which have been incubated. The maximum concentrations of each of the two acids in fresh eggs is 5 mg/kg on a dry basis. These concentrations do not change during storage of whole eggs but only by microbial decomposition respectively during incubation of fertilized eggs.
Because the initial concentration of organic acids is unaffected by pasteurisation, indirect conclusions can be drawn about the microbial condition of the raw material and the adulteration with incubated fertilized eggs.
A cautious evaluation leads to propose 50 mg succinic acid and 10 mgβ-hydroxybutyric acid/kg dry material as limiting concentration for edible material.
Zusammenfassung
Charakteristisch für den mikrobiellen Verderb von Eiprodukten ist die Erhöhung des Gehaltes an Bernsteinsäure, für befruchtete, bebrütete Eier die Erhöhung derβ-Hydroxybuttersäure. Sie kommen in frischen Eiern jeweils nur zu maximal 5 mg/kg Tr. vor. Ihr Gehalt verändert sich nicht bei der Lagerung von Eiern, sondern ausschließlich bei der jeweiligen Verderbsart. Bei der Pasteurisierung bleibt das ursprüngliche Säuremuster erhalten, so daß indirekt Rückschlüsse auf den mikrobiellen Belastungsgrad des Ausgangsmaterials beziehungsweise auf die Verwendung von befruchteten, bebrüteten Eiern gezogen werden können.
Bei vorsichtiger Beurteilung lassen sich als Grenzkonzentrationen für noch genußtaugliche Ware 50 mg Bernsteinsäure und 10 mgβ-Hydroxybuttersäure/kg Tr. angeben.
