Summary
For a positional mass spectrometric isotopic analysis, ethanol has been oxidized to acetic acid from which gases for isotope ratio analysis of different molecular parts can be obtained by pyrolysis or combustion. Investigations of ethanol from different origins demonstrated a correlation between theδ 2H value of the ethanol methyl group (C-2) and of the non-exchangeable hydrogen atoms of the fermented carbohydrate. In addition, an assignment of ethanol produced from the fermentation of carbohydrates of different C3 plant species and a discrimination between natural versus synthetic ethanol was possible. A significant enrichment of 13C was observed in position 1 for fermented ethanol and in position 2 for synthetic ethanol. From the results, criteria for the assignment of the origin of ethanol and for the proof of sugar addition to wine are proposed. With the same method, a determination of the origin of acetic acid is also possible.
Zusammenfassung
Zur positionellen massenspektrometrischen Isotopenanalyse wird Ethanol zu Essigsäure oxidiert; aus dieser werden durch Pyrolyse bzw. Verbrennung die Gase für die Isotopenverhältnis-messung erhalten. Untersuchungen an Ethanol verschiedenen Ursprungs zeigen, daß derδ 2H-Wert der CH3-Gruppe mit demδ 2H-Wert des nicht-austauschbaren Wasserstoffs im Ausgangskohlenhydrat zusammenhängt und daß sogar die Zuordnung von Ethanol zu Kohlenhydraten aus verschiedenen C3-Pflanzen und die Unterscheidung von Synthesealkoholen mög-lich ist. Für Gärungsalkohol erweist sich außerdem eine relative Anreicherung von13C in Position 1, für Synthesealkohol in Position 2 als typisch. Aus den Ergebnissen werden Kriterien für den Nachweis der Herkunft eines Ethanols and den Beweis der Zuordnung von Wein abgeleitet. Nach dem gleichen Verfahren ist eine Herkunftsbestimmung von Essigsäure möglich.
