Summary
9 further German vegetable species (root vegetables, cucumber, pumpkin, rhubarb, asparagus) were analyzed for their organic acid content. The predominant acids are malic and citric acid; malic acid was the most abundant except scorzonera and asparagus. Succinic, fumaric, and quinic acids are widely distributed. Isocitric acid was found in measurable concentrations only in scorzonera, rhubarb, and asparagus. —It could be demonstrated that pyrrolidone carboxylic acid (pyroglutamic acid), which is frequently found in vegetables, for the main part is formed during the clean up.
Zusammenfassung
9 weitere heimische Gemüsearten (Wurzelgemüse, Gurken, Zucchini, Rhabarber und Spargel) wurden auf ihren Gehalt an organischen Säuren untersucht. Von den Hauptsäuren Äpfel- und Citronensäure überwog bis auf Schwarzwurzeln und Spargel die Äpfelsäure. Bernstein-, Fumar- und Chinasäure sind weit verbreitet. Isocitronensäure wurde nur in Schwarzwurzeln, Rhabarber und Spargel in meßbaren Konzentrationen gefunden. — Weiterhin wurde nachgewiesen, daß die im Gemüse wiederholt aufgefundene Pyrrolidoncarbonsdure (Pyroglutaminsäure) zumindest im wesentlichen erst während der Aufarbeitung entsteht.
