Summary
The plant-pathogen fungusTrichothecium roseum produces in vitro as well as in vivo the toxic metabolites trichothecin, trichothecolone and rosenonolactone. Trichothecin is cytotoxic and inhibits the alcoholic fermentation. It is not metabolized by yeast during the alcoholic fermentation. All toxins showed a minor biological activitiy against microorganisms other than yeast. Trichothecin caused a bitter taste in wine at higher toxin concentrations (> 5 mg/l). Trichothecin was detected in a few samples of wine of higher quality.
Zusammenfassung
Der in Rebanlagen an reifen Trauben auftretende SchadpilzTrichothecium roseum Link ex Fr. bildet sowohl unter in vitro- als auch in vivo-Bedingungen die toxischen Stoffwechselprodukte Trichothecin, Trichothecolon und Rosenonolacton. Trichothecin ist cytotoxisch und kann aufgrund seiner Hefetoxizität die alkoholische Gärung hemmen. Während der Gärung wird Trichothecin nicht abgebaut. Alle genannten Toxine zeigen nur eine geringe Aktivität gegen andere Mikroorganismen. Hohe Trichothecingehalte (> 5 mg/l) führten bei Wein zu einem vom Verbraucher erkennbaren Bittergeschmack. Trichothecin konnte in Weinen höherer Qualität in Einzelfäallen nachgewiesen werden.
