Summary
Curing smoke and smoke aroma preparations formed by pyrolysis of wood are rich in phenols, whose participation in the aromatizing and preserving qualities of smoke have been proven. But phenols also could possess carcinogenic respectively cocarcinogenic, properties. In order to determine as completely as possible the composition of a phenolic extract obtained by a mild procedure a monohydroxy- and dihydroxyfraction were separated by treatment with a sodium borate solution. By GC/MS-analysis of their TMS-derivates numerous new phenols were identified. It seems to be especially noteworth that the phenol extract of smoke contains about 20% of dihydroxybenzenes the main constituents of which were represented by pyrocatechol and its 4- and 5-methyl-, 3- and 4-ethyl-, and 3-methoxy-derivatives. The presence of five further dihydroxybenzenes was proved. By the analytic technique described here, 119 phenols could be demonstrated, 62 of which were structurally identified.
Zusammenfassung
Der während der thermischen Pyrolyse von Holz entstehende Räucherrauch, insbesondere die daraus gewonnenen Räucherpräparate, sind sehr reich an phenolischen Verbindungen. Ihre Mitwirkung an der aromatisierenden und konservierenden Wirkung des Räucherrauches ist bewiesen; sie könnten aber auch cancerogene bzw. cocancerogene Eigenschaften besitzen. Um eine möglichst vollständige Klärung der Zusammensetzung eines nach einem schonenden Verfahren gewonnenen Phenolextraktes zu ermöglichen, wurden die Phenole mit Hilfe einer Natriumboratlösung in die Mono- und Dihydroxyfraktionen getrennt.
