Some studies on the protease from a novel source: The plantCucurbita ficifolia

Summary

An alkaline protease from the plantCucurbita ficifolia was studied using corn gluten as a substrate. At 25 units/ml, the enzyme solubilized 61% of the initial insoluble protein in 18.5 hours at pH 7.0, 55°C and 100 g/l of substrate.
