Summary
We observed that, by varying the synthesis temperature of native dextrans, their rheological behaviors in steady state as well as in transient experiments, were substantially changed. We have also shown that the degree of branching of the dextran molecules increases with synthesis temperature. Thus, we anticipate the possibility of controlling the rheological properties of dextran through the conditions of synthesis reactions.
