Comportment of S. cerevisiae in relation to ions Ca++ and Mg++ on beet molasses wort

Summary

Calcium and magnesium are present in molasses at variable and sub-optimal concentrations for yeast metabolism. A molasse wort containing 60 p.p.m. of magnesium and 125 p.p.m. of calcium allows an optimal fermentation. If calcium becomes quickly toxic by accumulation in the yeasts, this effect can be corrected by additions of magnesium, without significant effect on the biomass.
