Summary
An improved extraction procedure for soluble sugars and tannins from carob bean is described. The yeast flora of the carob is rich, withSaccharomyces predominant; an isolate ofSchizosaccharomyces versatilis cultured in the aqueous extract utilizes tannins as well as sugars to give a high biomass and protein yield of good quality.
