Gaschromatographische Untersuchungen zur Frage des Honigaromas

Zusammenfassung

Das Aroma von Honigen wurde gaschromatographisch untersucht. Die Trennung wurde auf einer Makro-Golay-Säule (Carbowax 1500 als stationäre Phase) durchgeführt. Als Anzeigegerät diente ein Flammenionisationsdetektor (FID). Es konnte gezeigt werden, daß Phenylalanin ein Precursor des artspezifischen Aromas von Honigen ist.

Abstract

Aroma components of different honeys were investigated gaschromatographically, using a macroGolay column with Carbowax 1500 as stationary phase and a flame ionisation detector. It could be shown that phenylalanine is a precursor of the specific aroma components of honey.
