The fatty acid composition of 19 strains of soil yeasts was studied. The total amount of unsaturated fatty acids in the lipids of soil yeasts substantially exceeds the amount of saturated acids. The basic saturated acid is palmitic, while the main unsaturated acids are oleic and linoleic.

It was established for the example of the strainSchwanniomyces occidentalis that the phospholipids contain the greatest amount of unsaturated acids and the least amount of saturated acids in comparison with the other fractions.
