Flocculation in yeast, an assay on the inhibition of cell aggregation

Summary

Flocculation in yeast depends on the presence of bivalent ions such as Ca++ causing cell aggregation. By binding the Ca++ with EDTA this aggregation may be inhibited. The amount of EDTA to prevent aggregation is strain-specific. It is called the flocculation value and expressed in micromoles EDTA. The flocculation value may be used to characterize both sedimenting and floating yeasts.
