Summary
A series of experiments have been done to investigate the influence of the various extraction conditions on the extraction of nitrogenous substances including proteins from the mycelia of Penicillium roqueforti. These experiments included the study of the effect of the nature of the extracting solution, the mycelia—glass beads ratio, the mycelia—extracting solution ratio as well as the extraction time. It was also possible to determine most suitable conditions for extraction. Fractionation of the mycelial proteins was also carried out and it was demonstrated that the mycelial proteins do not differ in their albumen and globulin contents from the spore proteins.
