Abstract
The production of extracellular mannitol from fructose and by an efficient mannitol-producing bacteria, Lactobacillus sp. KY-107, was studied in shake flask cultures. A final concentration of 70 g mannitol/l from 100 g D-fructose/l was obtained without any by-product within 80 h at 28°C.
