Misleading labelling of gluten-free products in the light of EU regulations: time for a change?

Background

Life-long gluten free diet is the only presently known treatment method for gluten-related disorders such as celiac disease, wheat allergy, dermatitis herpetiformis, gluten ataxia, and non-celiac gluten sensitivity. Patients suffering from these conditions require a very meticulous treatment, as gluten-containing grains, such as wheat, barley, and rye are some of the most consumed foods in the world and are widely used in food processing. It is crucial to remember that even gluten traces may be able to trigger inflammation in the small intestines causing damage to the intestinal mucosa. This can ultimately lead to impaired absorption of nutrients and various general complications (Holmes 2010; Sapone et al. 2012).

In order to increase the health and nutritional benefits of a gluten-free diet, patients are recommended to adopt a diet comprised of a variety of naturally gluten-free foods and a reduced consumption of highly processed foods. All patients are advised to carefully...
