Abstract

Structural and immunochemical studies were carried out on mannans isolated from various species of the genusSaccharomyces. It has been found that mannans ofSaccharomyces cerevisiae, Saccharomyces bayanus, Saccharomyces chevalieri, Saccharomyces italicus, Saccharomyces logos, Saccharomyces oviformis, Saccharomyces uvarum andSaccharomyces willianus are structurally and antigenically closely related, they gave high cross-reactions with anti-Saccharomyces cerevisiae serum. Mannotetraosa was found to be the immunodominant group of these mannans. Mannans ofSaccharomyces rouxii andSaccharomyces rosei showed different structural features and immunochemical properties.
