Zusammenfassung
Die Bedeutung der Ernährung intensivbehandlungspflichtiger Patienten befindet sich im Wandel von der Substitution mit Nährstoffen hin zur Nährstofftherapie. Die Aufgabe, Patienten kaloriendeckend zu ernähren, wird ergänzt um die gezielte Auswahl einzelner Nährstoffe zur Beeinflussung des Stoffwechsels und der Immunfunktion. Daraus ergeben sich erweiterte Anforderungen an den Intensivmediziner. Diese beinhalten die Kenntnis der durch unterschiedliche chirurgische Traumata ausgelösten Stoffwechselveränderungen und -entgleisungen und die Fähigkeit, den Patienten entlang der (neuro-) endokrinen, metabolischen und immunsystemischen Umstellungen zu therapieren.
