Abstract
Cucurbitaceous vegetables are an important part of the human diet and they play an important role in maintaining national food security. The important members of the cucurbitaceous family (largest family) are cucumber, watermelon, muskmelon, bitter gourd, bottle gourd, sponge gourd, and ridge gourds. However, in the present time there are so many minor/underutilized cucurbits like oriental pickling melon, snapmelon, chow-chow, and gherkin, which are not explored due to different reasons like unavailability of planting material, unawareness about importance in terms of nutrition, and limited knowledge about successful production of crops. This chapter completely covers every point of cultivation, i.e., from sowing to harvesting of these underutilized cucurbits.
