Abstract
Coffee is a global beverage with a long, sometimes dark, history. Coffee “is grown commercially on four continents and consumed enthusiastically on all seven” (Morris 2018, p. 7), but most coffee consumption occurs in the developed countries of the world, the Global North, with the United States leading. People in the less developed world, the Global South, drink less coffee. Rather, they grow and produce the beverage based on the coffee bean, or cherry. That difference is crucial for understanding the history and current standing of coffee as a global beverage and commodity. Caffeine, which provides a lift and heightens concentration, helps to explain coffee’s success since its discovery in East Africa around 850 CE.
