Abstract

Agro-industrial residues contain lignocellulose and bioactive compounds that could be recycled as enzymes, vitamins, dietary fibers, pigments, organic acids, bio-fuels, antioxidants, antibiotics, and animal feed, for example. Here we review the fermentation of agricultural waste for the production of food additives, antibiotics, antioxidants, enzymes and biosurfactants.
