Abstract

There is an increasing interest in bioactive carbohydrates due to their numerous biological applications. Bioactive carbohydrates can be obtained from innumerable plants, animals and microorganisms, many of which have immense potential for use as ingredients in food and pharmaceutical products. Extensive studies have been carried out in various researches to explain the structure and bioactivity mechanism of natural polysaccharides and their conjugates. Many of these have gained attention due to their documented biological activities, such as antitumor, antioxidant, antidiabetic, antiviral, hypolipidemic and immunomodulatory activities. Several kinds of research have been carried out to purify and characterize numerous bioactive carbohydrates with different structural properties and biological effects. This chapter provides a summary of recent developments on structural properties and biological activities of these bioactive carbohydrates.
