Abstract
Lyophilization, also known as freeze-drying, is a process known from the ancient times for preserving material by dehydrating the sample, which includes first freezing the sample and then drying under a vacuum at very low temperatures. This chapter covers its origin, definition, and key historical events that led to the development of modern day freeze-drying, and its widespread applications ranging from basic food needs to biotechnology products. Special consideration is given to the history of lyophilization process, lyophilized vaccines, and biopharmaceuticals.
