Abstract
For the first time, a Total Diet Study (TDS) has been carried out in Hong Kong by the Centre for Food Safety (CFS), aiming to estimate dietary exposures of the Hong Kong people to a range of substances including chemical contaminants and nutrients, and thus assess their potential health risks. This chapter describes the considerations associated with the capability and capacity building for conducting of the TDS and introduces the study plan, including the development the TDS food list, the selection of substances, sampling and preparation procedures, laboratory analysis, and dietary exposure estimation.
