Abstract
During the last 50 years, and especially in the 1990’s, the egg industry has reduced the number of production units, while at the same time increased the average unit size. In some cases, production complexes now house more than one million hens per site. Capital-intensive units have replaced labor-intensive operations as automation and computer controls were adopted. Nowhere has this been more evident than in the processing and packaging of eggs.
