Zusammenfassung
Ernährung als Teil eines Lebensstils stellt den wichtigsten Umweltfaktor dar, der über das gesamte Leben die Physiologie eines Organismus beeinflusst, seine Homöostase reguliert und somit auch seinen Gesundheitszustand maßgeblich mit bestimmt. Bei einer Mahlzeit entfalten Hunderte von Inhaltsstoffen gleichzeitig ihre Wirkung, in dynamischem Wechsel und spezifisch für einzelne Organe. Der Organismus muss sich daher beständig an verändernde Bedingungen anpassen. Daran sind alle molekularen Stationen im biologischen Informationsfluss beteiligt: Genexpression, Proteinsynthese und deren gezielte Funktionskontrolle für die koordinierten Flüsse der Metaboliten im Interorganstoffwechsel. Auf diese Weise wird letztlich der Phänotyp eines Organismus auf der Grundlage eines gegebenen Genoms determiniert (◘ Abb. 3.1). Die Komplexität dieser Interaktionen von Nahrungsfaktoren in einem Säugerorganismus als Ganzes zu verstehen, stellt eine besondere Herausforderung für die moderne Ernährungsforschung dar.
