Abstract
Floral scents have caught our attention since antiquity, and the admiration for fragrances has resulted in the creation of many perfumes and cosmetics. Research continuously discovers new volatiles. This review addresses floral scent composition and its relation to specific pollinators, as well as the involvement of floral volatiles in defense reactions. Important for efficient plant pollination is the precise timing of scent emission, which is summarized under the topic of the floral scent clock and circadian regulation. Recent research has resulted in the elucidation of the underlying biosynthetic pathways, and the steps involved in the regulation of scent synthesis and emission. Some biotechnological applications of scent-synthesizing enzymes are reviewed.
